Keto Begun Bhaja

Bengali Begun Bhaja or Baingan Bhaja is a dish prepared out of thick slices of the eggplant marinated in spices and coated with flour and deep-fried.
The taste of begun bhaja is difficult to explain to anyone who hasn’t eaten fried brinjals. Suffice it to say that it is probably unlike anything you’ve ever tasted, especially if seasoned with the right spices.

Ingredients
1 large eggplant cut into half-inch round slices (baingan or aubergine)
1 teaspoon red chili powder or cayenne pepper
½ teaspoon turmeric powder (ground turmeric)
1 teaspoon Garam Masala Powder (optional)
1 teaspoon dry mango powder or amchur powder (optional)
2 Tbsp Nutribarn Multipurpose flour or as required
salt as required

Preparation To Make Begun Bhaja
Rinse the eggplant well and slice it in 1/2 inch thick roundels.
Soak the slices in salted water for 15-20 minutes. Remove and pat dry all the slices.
Making Begun Bhaja
Marinate the slices with spices and salt to taste for 10 minutes
Heat olive/coconut oil in a pan. Take Nutribarn multipurpose flour in a plate. Coat each slice with the flour. Dust off the extra flour.
Now pan fry the slices till crisp and golden brown on both sides on medium heat. Flip them a couple of times for even cooking.
Once they become crisp and golden, place the fried eggplant slices on a paper towel to absorb the extra oil.
Serve baingan bhaja hot with a ow-carb dip of your choice and enjoy!
