These ingredients are a classic pairing for ice cream and this Keto Mint Chocolate Chip Ice Cream combines both flavors for one decadently delicious treat!It’s a healthy combination as it’s loaded with healthy fats and plenty of nutrients (in the form of avocado!).   1. Add Coconut milk, Avocado, Vanilla extract, peppermint extract, lemon juice, salt and sweetener to a blender and blend until the texture is creamy smooth. You can adjust the sweetness and minty-ness to taste.

  2. Place the batter in a sealable container and freeze until it is set , about 1.5-2 hours. If you are freezing overnight, leave out at room temp for 10-20 mins before indulging

  3. Please note that 1 batch is not more than 1-2 servings, but feel free to double it up using the recipe.
