Keto Upma
Keto Upma recipe is made with cauliflower rice and few vegetables which are a delicious, low carb, gluten-free, vegetarian keto breakfast dish that can be prepared in under minutes.

Ingredients
170g finely chopped cauliflower
120g shredded panner
2 green chillies
Handful curry leaves
1/2 teaspoon mustard seeds
1 teaspoon olive oil
1/2 tsp lime juice
to taste Salt
Handful coriander leaves
Handful pudina( mint) leaves
Instructions
Step 1 : Cut Cauliflower into medium size chunks - you can also use the entire stem. In a pot, par-boil the cauliflower chunks. Drain the water completely and use a food chopper to blitz the cauliflower till fine. Use a food processor to crush the paneer into a chunky paste.
Step 2: In a non-stick pan, add oil, mustard seeds, green chillies and heat till sizzling. Add finely chipped onions, turmeric and salt and cook till onions turn transparent.
Step 3: Add the cauliflower and paneer and cook till cauliflower is completely cooked.
Step 4: Once cooked, take off the heat and add the phudina and lime juice and mix well. Garnish with coriander and serve hot!.
